We had an outstanding harvest in 2007: just the right combination of factors to maintain balance and award great character to all of our wines and in Apalta in particular. The wines have beautiful balance, good levels of acidity, deep color and very elegant fruit with velvet-like tannins. Spring-summer in 2007 brought cooler temperatures, causing a delay in the fruit set. Good temperatures by the end of Summer allowed an extension of the season. In March, with the beginning of Autumn, we continued to enjoy great conditions: the right luminosity and temperature allowed us to wait patiently for the perfect phenolic maturity.
To express the terroir of Apalta is our mission; so our winemaking philosophy remains very natural and we adhere to minimal intervention. Our key points are 100% hand harvesting, strict fruit selection, gentle extraction methods and a judicious use of oak to preserve the fruit but integrate the complexity that a wine of this quality deserves. There is no clarification and a very light filtration. We create natural wines that are a true expression of their origin.
Color: Inky deep red with bright violet hints. Nose: Expressive red fruit, with fresh notes of rosemary, white pepper and sweet spices. Elegant oak touches with notes of vanilla and subtle nutmeg.Palate: Pleasant attack with round and juicy tannins towards the mid palate, finishing with fresh acidity and a long and lasting sensation. Service and Food Pairing: Ready to drink now or cellar for several years. Decant and serve at 16° C to 18° C (58 to 64° F). Ideal companion for meats and elaborate dishes.
