Hand-harvested early in the morning, in small baskets of 15 kgs.
2008 is a year that could be characterized as fairly extreme in terms of temperatures. To reach the perfect phenolic maturity we did not have to wait to long and we were able to finish the harvest before the end of April and the first important rain.
We wanted to keep the aromatic profile of the Semillon with a twist of the oak complexity. We hand harvested 100% of the grapes. Then we carefully crushed them followed by a cold skin contact for 4 hours in the press to have a creamier mouth fill. Natural decantation then in tanks, slow and low temperature fermentation and 6 months of ageing in French oak barrels with lees steering. The result is a wine that kept is natural flavor and acidity with a round texture in the mouth, and the delicate notes of sweet spices from the oak.
Color: Light delicate yellow with lime hints.Nose: Subtle nose with white flowers, pears and sweet spices from the oak at the finish.Palate: Very bright texture and rich volume, pleasant acidity and a long finish. Service and Food Pairing: Very food friendly, this Semillon is perfect for fresh vegetable salads, sea food and appetizers in general. Serve well chilled from 6 to 8° C (42° F to 46°F).
