100% Pinot Noir
Our Atalayas vineyard in Casablanca is located on slopes facing different
directions, which gives great diversity in maturation and a great complexity
once all the different parcels have been assembled into the final blend.
In 2007 season, due to the special conditions in April, the harvest in Casablanca
was longer than scheduled.
We had to divide the vineyard into sectors of differentiated maturity and
we started to harvest first in riper sectors while waiting for the remaining
sectors to continue ripening.
Using effective canopy management and by conducting two green harvests,
we avoided any problems with botrytis, and were able to wait until May the
4th to pick the last grapes.
• 78% of the grapes went through rigorous hand de-stemming to enhance fruit
quality. 22% went to a strict quality control selection of the bunch and the
berry before being crushed.
• 92% of the grapes underwent cold skin maceration for 4 days at 10ºC
• Fermented in French oak vats at 25ºC for two weeks with wild yeast.
• 100% of the blend was aged for 15 months in French oak barrels.
• Bottled the 3rd of September 2008; 820 cases made.
COLOR: Shinning light ruby red, with purple shadows.
NOSE: Expressive fruit aromas, such as red and black berries, rosehip and
sage. Subtle notes of sweet spices from the oak at the finish.
MOUTH: Light to medium body, with soft and juicy tannins, fresh acidy
and more spices and fruit aromas towards the finish. Very charming and
long persistence.
SERVICE AND FOOD PAIRING: great with typical Italian antipasto, Parma
ham, goat cheese and gazpacho. Open and serve at 16º C.
