We had an outstanding harvest in 2007: just the right combination of factors to maintain balance and award great character to all of our wines. The wines have beautiful balance, good levels of acidity, deep color and very elegant fruit with velvet-like tannins. Good temperatures by the end of summer allowed an extension of the season. In March, with the beginning of Autumn, we continued to enjoy great conditions: the right luminosity and temperature allowed us to wait patiently for the perfect phenolic maturity.
All the grapes were harvested by hand in small cases of 12 kilos and carefully transported to the winery where we had a bunch selection in long sorting tables and a berries selection after destemming. Then all the berries were macerated up to 4 weeks to extract structure and color. Fermentation lasted about 2 weeks in stainless steel tanks, utilizing native yeast at 28 to 30° C. After fermentation 68% of the wine was aged in French Oak barrels for 9 month.
Color: Red ruby color.Nose: Clean and delicate nose with fresh red and black fruit with light spiciness and sweet touches.Taste: Well balanced and elegant mouth feel with sweet species and pleasant finish.Service and food matching: serve from 16 to 18° C (60 to 65°F). Ideal companion for medium season dishes, like pastas or red meat.
